Dooriel Standard Collection

These oysters are 3 years old. We buy in baby seed from certified hatcheries at 5mm and after 3 years of growing, monitoring, turning and grading we get a beautiful standard oyster.

Meats are very tasty as our unique terrain lends itself to a salty yet sweet complex oyster. We sell our standard oysters in three main sizes no4 (46-64gr),no3 (65-85gr) and no2(86-110gr)

All our standard oysters are triploid so we can sell them year round.

The summer sales side of our oysters has become increasingly bigger as people become more aware of the triploid oyster which allows for consumption year round.

Dooriel Speciale Limited Selection

These are our blue-ribbon oysters. They are a minimum of 4 years old and well worth the wait. We keep them longer than our standards and turn them more frequently in their final year.

The slower growth allows their meat to become full and develop a more intense flavour. These oysters have a briny flavour with a deeply complex fresh sweet finish.

Again these are triploid so year round enjoyment is indeed possible.Please contact for sizes and availabilty

Half Grown

Half grown or juvenille oysters were once all we sold.The rough atlantic waves of Dooriel Creek really helped deliver a great half grown oyster.We have moved now toward growing mature oysters but have also kept this important side of our business in place.

We sell our juvenille oysters from 18months to 2.5 years old.They are specially hardened for on-growing in other bays and have a superb shape and cup.Again contact for further information and availabilty.
